Frequently Asked Questions

Question: How does Ascorbic Acid prevent Scurvy?
Scurvy is a disease which is caused by the bodys inability to produce collagen due to lack of Vitamin C in a diet. Ascorbic Acid (Vitamin C) prevents scurvy by acting as a catalyst in your body to build collagen - the connective tissue which cushions the joints in your body and holds your teeth and organs in place.

Question: How does Ascorbic Acid inhibit enzymatic Browning?
Enzymatic browning is the process which can cause fruit and vegetables to become brown when cut or sliced. It is the products of an enzyme called polyphenol oxidase that cause this reaction when the cells are cut or sliced. The inhibition of enzymatic browning is actually caused by higher acidity (e.g. pH below 4.0) inibiting the activity of the polyphenol oxidase. Adding Ascorbic Acid allows you to regulate the acidity level to below 4.0.

Question: How does Ascorbic Acid help Iron absorption?
There are two different types of Iron - heme and honheme. Common sources of heme iron are usually animal based foods such as meat, fish, poultry and dairy. Common sources of nonheme iron are plant based and include beans, spinach and lentils. The human body is not as good at absorbing nonheme iron as its heme counterpart. Ascorbic acid strongly boosts your bodys ability to absorb this nonheme iron - this is only the case when the source of the nonheme iron and ascorbic acid are digested together.
