Xanthan gum is a stabiliser, emulsifier and thickening agent used in salad dressings, sauces and fillings. It is derived from the combination of plant sugar syrup and a bacteria called Xanthomonas campestris - when combined, the result is a sticky substance which is dried and formed into a powder. Xanthan gum is a bio polymer, which is structured similarly to cellulose. It is produced through the fermentation of sugars by the Xanthomonas Campestris bacteria.
As a stabiliser, Xanthan gum is commonly found in store-bought salad dressings, sauces and many products with an oil and water mixture. Xanthan gum helps to prevent separation of ingredients, and may also be found in pastry fillings. Some ice-cream products may contain Xanthan gum, to prevent the formation of ice crystals and retain a smooth consistency. Xanthan gum may also be used in gluten-free products, to replicate the binding and sticking effects of gluten.
Xanthan gum is safe to consume, providing you do not have an allergy to any of the sugar syrup derivatives. It is a carbohydrate and may cause some bloating in susceptible people.
Only a small amount (around 0.5% of product weight) of Xanthan gum is needed to have the appropriate effect. Xanthan gum is one of the most commonly used food additives in use today.
Usage: Xanthan gum is used to prevent splitting and separation of ingredients in dressings, sauces and fillings.
